In France near the Alps, it's cold right now. Not quite the Denmark freeze-off-your-nose kind of cold... But for a girl who grew up in a sunny, sub-tropical American town, I'm feeling the desperate need for something toasty.
CUE: The Warming Bowls Series!
I find this recipe, the first in our Warming Bowl Series, to be so soothing. It's quite easy to whip together in one pot and very cheap at $1.50 per bowl.
Get out a large pot, stirring spoon, cutting board, and knife. That's really all you need! Now... Let's get crackin'!
Warming Sweet Potato Coconut Lentil Bowl
Serves: 6
Prep Time: 5 Minutes
Cook Time: 25 Minutes
Total Time: 30 Minutes

INGREDIENTS
2 Tablespoons Olive Oil
2 Small Yellow Onions
4 Cloves of Garlic
1 Tablespoon Curry Powder
2 teaspoons Ground Cumin
2 teaspoons Ground Paprika Spice
1 teaspoon Ground Ginger
3/4 teaspoon Sea Salt
2 Cups Vegetable Stock or Water
1 x 400 g (15-Ounce) Can of Coconut Milk
1 Vegetable Bouillon Cube, Crushed
2 Medium Sweet Potatoes, Peeled & Cubed
1.5 -2 Cups Dry Brown Lentils
1/4 Cup Sun-dried/ Roasted Peppers in Oil
1 Lemon/ Lime
METHOD
Heat oil in a large pot over medium high heat, about 1 minute. Dice onion and garlic. Add onion, garlic and ginger. Sauté until the onions and garlic are lightly browned, adding small amounts of water as needed to prevent burning, about 2 minutes.
Add coconut milk, water or stock, and crushed bouillon cube. Stir in sweet potato, remaining spices, and lentils. Roughly chop/ tear the sun-dried red peppers into 1-inch pieces and add with accompanying oil.
Bring pot to a boil. Reduce to a simmer and cooked partially covered until the sweet potatoes are soft and the lentils are fully cooked, about 15 - 20 minutes.
CHEF'S TIP
Swap brown lentils for red lentils to achieve a sweet, nutty taste.
Add a 15-ounce can of diced tomatoes (drained) for a sweeter taste and lighter consistency.
SUGGESTED PAIRINGS
Basmati rice, cooked with a bouillon cube
Gluten Free Flat Bread (I love this one)
Roasted Almond Milk
OPTIONAL GARNISH
Shredded Coconut, Lightly Toasted
Fresh Lime Juice
Cilantro
